Cutlet chops are from the shoulder end of a saddle of lamb, often referred to by Butchers as the Best End of Lamb.
Suggested portion size - two - three cutlets per person
All our lamb is British and pasture raised with full traceability right back to the farmer. We only select lamb from farms and abattoirs that meet our standards of welfare and animal husbandry.
We age our lamb for 7-10 days in our carcass dry ageing room, which features a Himalayan salt wall which aides in the texture and flavour development of the lamb.
